Healthy Recipes - A 500 Calorie Dinner

After a long day at work, you still want a meal that fills you up, tastes great, yet doesn’t pull you away from your diet goals. Try this 500 Calorie dinner – and enjoy a low fat, low calorie, yet tasty meal!

Flank Steak with Sweet-and-Spicy Slaw

Ingredients

  • 3 oz. Flank Steak
  • 1 garlic clove, minced
  • 1 tablesoon minced fresh ginger
  • 1 teaspoon Worchestershire sauce
  • 1/2 teaspoon brown sugar
  • 1 cup shredded green cabbage
  • 1/4 cup sliced red bell pepper
  • 1/4 cup shredded carrot
  • 1/4 cup shredded cucumber
  • 1/4 cup chopped scallion
  • 1/4 cup sliced mango
  • 1/4 teaspoon cumin
  • Juice from 1/2 lime
  • 2 teaspoons olive oil
  • Pinch of sugar, salt, and black pepper
  • 2 teasponns roasted peanuts

Preheat the oven to 350 degrees. Marinate flank steak with the garlic, ginger, Worcestershire sauce, and brown sugar for 5 minutes.

Sear steak in an oven-proof skillet for 2 minutes on one side, flip it and then place skillet in oven for 10 minutes or until steak reaches desired doneness; slice.

Meanwhile, combine green cabbage, red bell pepper, carrot, cucumber, scallion, and mango. Whisk together cumin, lime juice, olive oil, sugar, and salt and black pepper to taste and toss with vegetables. Top with roasted peanuts and serve with steak.
